/Behind the story/

Luz Helena Salazar is the matriarch of the Arcila family. She is a strong woman, warm and talented leader and a lifelong advocate for Colombian grown coffee. Married Jairo Arcila, mother to Carlos and Felipe Arcila, the co-founder of Cofinet. Together, they own five small farms, Finca Villarazo, Mazatlan, Buenos Aires, Maracay and Santa Monica. Luz Helena Salazar grew up in Armenia, Quindio - in the heartland of coffee growing country in the Paisa region, a rural area that is well known for growing the majority of Colombian coffee. Luz Helena has grown to be an extremely talented coffee producer, due to her agricultural knowledge, resourcefulness and most important, her talent to work and manage over 50 people during the harvest season.

/Harvest & Post-Harvest/

This is a unique Pink Bourbon microlot. Pink Bourbon is a hybrid of Red and Yellow Bourbon varieties that was first discovered and grown in Colombia. There is more than color and altitude on its side, chemical breakdowns have found that Pink Bourbon has higher glucose content, especially compared to many other varieties and disease resistance than its parents. The cherries are selectively handpicked with very strict parameters for ripeness and sugar content. After harvest the cherries are exposed to a dry anaerobic fermentation of 72 hours with the pulp on and during this fermentation tartaric acid and Eucalyptus leaves were added. Afterwards, the cherries are pulped with a very thin layer of mucilage and left in the patio to sundry till it reaches the desired moisture content.
