Our roastery
Our philosophy is simple, we want more people to drink good coffee. We try to accomplish this through craftsmanship, transparency and participation. This is how we try to contribute by creating a better coffee culture.
PAGA is a microroastery locally based in the heart of central Bangkok, Thailand founded by a long time coffee professional and multiple champions national and awarded at world stages (2017, 2018 Romania National; 2018 9th in the world) Gabriel Carol and his fiance Patrica. The name PAGA is inspired by their names and it happens to be a homophone to a Thai word that means flower.
We source our coffee from producers who care not only about the quality of the coffee, but also the farm itself and their employees. We choose our beans for quality, cleanliness, sustainability, following our guidelines to bring in only single origin microlots of high grade coffee varieties, and roasted in small batches. Our commitment is to bring you delicious and exciting coffee from around the world and roast it bright and sweet as much as possible. You will never find any blends at PAGA, in order to showcase specific flavour profiles and to present each farm we work with.
Once the coffee arrives at the roastery, we roast it in our highly efficient environmentally friendly roaster, where we have the best opportunities to do it justice. From the beginning we decided to go with Loring Smart Roaster (S7 Nighthawk), a roaster that produces incredibly clean coffee which we can assure you that our coffees will be very sweet, bright and clean every time. It also allows us full control of our roasting profiles with aim for consistency in every batch through a logging software (Cropster) where we record every single batch that we roast. Every roasted batch undergoes a number of quality checks, logging the roast profile and Agtron color, quality control in cupping and brewing. For our green coffee beans, we stored them in Grain Pro bags or Ecotact hermetic bags in a climate controlled private room.
Did we already mention that our roaster is the most environmentally friendly? It has minimal emissions and up to 90% smokeless while consuming less energy. Being environmentally conscious in the choice we made is also our focus on sustainability from seed to cup. At the end of the day we’re trying to facilitate a story of growth and passion. Not just about us and our story, but the story of our coffees, their producers - our partners.
