Finca Monte Verde

/Behind the story/

Finca Monte Verde is located in Herrera, Tolima and is a 15-hectare farm cultivating the unique coffee varieties of Wush Wush, Red or Yellow Bourbon, Geisha or Mocca. It is home to Gilardo Gutierrez and his family, who have over 70 years experience in growing coffee, making the Gutierrez family now fifth generation of coffee producers. Ten years ago, a significant twist happened under the guidance of their three children who are dedicated Q Graders and Q processors, started focusing on their vision and producing exotic varieties supported by their parents. Newerley Gutierrez revolutionized the way of processing Wush Wush by applying different techniques of fermentation he acquired the nickname MR. Wush Wush.

/Exotic Extreme Rare Variety/

Wush Wush is an extremely rare variety discovered for the first time in Keffa region, Ethiopia. Imported to Colombia by Finca Monte Verde, this rare variety started to grow and develop much better in the Colombian environmental climate. Known for their impeccable attention to details, their coffee cherries are at their peak ripeness, then sorted and processed using natural yeast and dry aerobic oxidation. Temperature is controlled and PH level and when the coffee mass reaches 35 degrees Celsius it is cooled with spring water. In 100 hours of aerobic fermentation, the coffee mass is stirred twice daily to homogenize the process. Following processing the coffee is dried out for 29 days in a temperature controlled environment.
