/Behind the coffee/ 

Carmen Estate is located in the Volcan Valley, part of the Baru Volcano region of Chiriqui, near Boquete. Located between 1700-1800 meters above sea level, this valley is considered the most important and impressive coffee growing region in Panama due to its elevation, dense vegetation, volcanic soil and diverse micro-climates. Each year coffee cherries are manually harvested by the Nôbe-Buglé indigenous people who have trained to harvest only when the coffee cherries are bright red and fully ripe, carefully selected and handpicked. Coffee cherries are transported from field to mill to be processed as quickly as possible. Advanced low water machinery washes away the skin, pulp, and mucilage from parchment beans. Using small amounts of water contributes to Carmen’s efforts in the ecological system and residues from the milling process are recycled in the farm as organic fertilizer.

Method: 4 steps 

Step 1: 50g - bloom for 30s

Step 2: 70g - 30s add water to 120g in 8-10s

Step 3: 60g - 50s add water to 180g in 10-12s

Step 4: 70g - 1:15 add water to 250g in 10-12s

Brewing time: 2:10-2:25

We taste: Jasmine / Pineapple / Melon / Green Apple
