Auction Lot Sidra Acacias

/Behind the story/

We are so stunning to release this coffee from Cafe Granja La Esperanza. This particular microlot comes from a private auction and we happily announce that we won the lot no.11.

The first Sidra seeds planted on Finca Potosi were brought from Ecuador from the province of Pichincha, when Don Rigoberto and the quality director of Cafe Granja La Esperanza traveled in 2016 to Canton Quito, Parroquia Nangal. Once the seeds arrived at Potosi nursery was created in October of 2016 and was taken to the field in April of 2017. Finca Potosi has approximately 3800 trees on 1.5 hectares. The main harvest occurs between the end of April and the beginning of June.

/SIDRA ACACIAS auction lot/ 

From manual and rigorous picking and 40 hours of fermentation in whole cherries, after the cherries are pulp then start a second fermentation in mucilage for 20 hours. After fermentation, the coffee is left for 72 hours in a mechanical dryer. After the second fermentation, the coffee is washed and dried for 5 days in a mechanical dryer.

For this particular coffee, we create a special recipe and method, so you guys can brew and enjoy four cups.

Age to drink: 7 days after roast date *recommended

Coffee weight: 12g

Grind size: 20 - 22 clicks CMD 

Water amount: 180 ml

Temperature: 93-94 Celsius

Method: 3 steps 

Step 1: 40g - bloom for 30s

Step 2: 70g - 30s add water to 110g

Step 3: 60g - 50s add water to 180g

Brewing time: 1:50 - 2:00

TDS: 1.35 - 1.40 target

We taste: Calendula flowers // Chamomile // Melon // Orange Blossom // Pear // malic acidity and silky mouthfeel
